Spaghetti Dinner! (10-15 minutes)

Hi Everyone!

I have a few more dinner, lunch and snack inspirations coming your way!

I know that this is a weird combination but we made due with what we had at home last night for dinner and it actually came out super delicious!

Last night I had spaghetti and fried okra for dinner. You know I am all about quick delicious meals.

The fried okra is from the frozen section of our local grocery store, I checked the nutrition label and it is vegan! Some are not so always be sure to check the label beforehand. The tomato sauce that I used is store brand as well, I just added some extra ingredients to give it that home made vibe. I don’t have a specific brand that I always use, I try out different ones all the time. There are some that I like more than others, that I don’t feel over power the dish so I try to stick with those.

If you would like to replicate this dish I will list the ingredients below as well as quick and simple directions. I do not provide measurements because there really is no need to. I usually “eyeball” it and try to see what would work best with the amount of people that will be eating.

 

Ingredients:

  • spaghetti
  • tomato sauce (brand of choice or if you are adventurous.. home made!)
  • frozen or fresh onion and peppers (I used frozen)
  • spinach (fresh or frozen)
  • vegan “ground beef” crumbles
  • any side of veggies of choice, I decided to go with breaded okra

 

Directions:

Boil pasta while simultaneously in another pan  saute onion and peppers and vegan “ground beef” crumbles. If you would like veggies on the side I suggest you get those started as well. Once you saute everything for about 5-7 min,  add tomato sauce of choice and spinach  and cook that for about another 5 min or so. Then once everything is cooked you may plate and enjoy. Remember that you may need to cook a little longer depending on how much you are making. The amount that I made was for about 3 people.

That is it for this dish, very simple and easy to make and wont take up too much of your time. It is always better to cook at home because you know what you are putting into your dish. Even if you use store bought items it is still healthier than eating out. Although it is nice to go out once in a while and enjoy a meal that you do not have to cook.

BBQ Jack Fruit Over Rice With Veggies On The Side and “Cheesy” Muffins!

I hope everyone had a wonderful week and are having a relaxing weekend, if you work over the weekend I hope it goes by quick and you get to relax and enjoy your “weekend” as it comes.

About 6 months ago I had jack fruit for the first time and I was surprised at how delicious it is! I have started to incorporate this into my diet, my boyfriend absolutely loves it. You can buy canned jack fruit or the actual whole fruit if it is available for you. I have tried canned jack fruit, but the one I used for this recipe is pre-packaged. I had the jack fruit over rice, I also steamed some veggies  and also made some vegan cheese and green onion stuffed muffins.

Ingredients:

BBQ Jack fruit (either canned jack fruit and BBQ sauce separate or pre packaged BBQ jack fruit)

rice

sauteed steamed veggies

Store bought refrigerated muffins

Vegan cheese

Green onions

 

Muffins:

I split the muffin dough in half, and added shredded vegan cheese and some chopped onion in the middle. I then placed them in a pre-heated over for 15 minutes.

Jack Fruit:

I purchased pre-packaged BBQ Jackfruit

Vegan “cheesy” Pastry Dogs!

I hope you had a wonderful week! I wanted to share this quick little recipe with you all, it is my vegan take on “pigs in a blanket”. I personally do not like that name so I call mine “Vegan Dogs in a blanket”.

I bought some store bought croissant pastry dough and added vegan cheese, I had regular Mozzarella style and also Mexican blend. I also cut up some vegan “hot dogs” and added the in the croissants. These are very easy to make and take less than 10 minutes to put together. Preheat the oven to 375 and cook for about 10-15 min. Let cool for about 10 minutes and enjoy. They are delicious while still warm and are great as a snack or a side dish or for finger foods if you are hosting a party.

Delicious Lazy Spaghetti and Vegan Meatballs

Hi Everyone!

CARBS!! Specifically spaghetti is what I have been craving all week! My goal is to come up with the perfect fresh tomato sauce recipe and it is something I am working on. For this recipe I used jarred tomato sauce, I have been feeling sick with a cold the whole weekend so I wanted something quick and easy. Since I used jarred tomato sauce I wanted to  make it a little special so I added sauteed onions and cherry tomatoes, it came out delicious and it was very quick! I also added vegan meatless balls which were marinated in the sauce while it cooked and they turned out amazing.

 

  • While I boiled spaghetti (10 minutes), I cut up a quarter white onion and a package of cherry tomatoes.
  • I then sauteed the onions for about 3-4 minutes and added in the cherry tomatoes. I let the onions and cherry tomatoes cook for about 4 minutes, then added tomato sauce.
  • In the mean time I microwaved the  frozen meatless balls for about 2 minutes.
  • Once the meatballs are done warming up, I added them to the sauce and let them simmer until the pasta is done cooking.
  • I drain pasta and combine with sauce and meatballs. I usually add nutritional yeast but I ran out so I did not add them this time.

Avocado and Tomato Open Face Sandwiches

I hope the New year is treating you well, I have been gone for a little while but now I am back and I would like to share a new simple recipe with you!

During the winter it gets dark earlier and I find that I don’t feel as motivated to cook after work. I have been trying to make dishes that don’t take too long and this sandwich is one of those recipes! It took me about 10 minutes to make and they came out so amazing, you should definitely try them. 🙂

I wanted to try something different so I used English muffins which turned out really delicious. I then mashed some avocados and added salt and pepper. I sliced up a nice mildly ripe tomato. To dress this sandwich up I used a vegan mayo spread and I topped the sandwiches with balsamic vinaigrette. I will list all of the ingredients below, if you do decide to make this please let me know in the comments what you think.

Time: 10 minutes

Ingredients:

English Muffins (I used two English muffins to make 4 open faced sandwiches.)

Tomatoes – 2 (depends on how many tomato slices you want on each sandwich)

avocados – 2

salt- a pinch on each sandwich

pepper- a pinch on each sandwich

vegan mayo spread- a teaspoon on each sandwich

balsamic vinaigrette- a drizzle o each sandwich

Hi Everyone,

I know it has been a while since my last post. I want to let you know that I will start posting again! I have been in a rough spot the last couple months. I am now starting to get on track, I want to end 2018 determined and continue it on through 2019. I will be posting more vegan recipes but I will also start posting about many other things. Like a vegan recipes/lifestyle blog.

I am looking forward to this new beggining and I hope you will tag along for the ride.

Breakfast Burrito

I know I have not posted in a while, sometimes life can get I the way but now I m back! I wanted to show you all this delicious breakfast burrito that I made about a week ago.

The thing that I love about breakfast burritos is that you can add anything t them. A lot of the times I use leftovers to make breakfast burritos and thats exactly what  did for this one!

Ingredients:

Quinoa from the day before, frozen veggie blend, refried beans, 1 can of chickpeas, salt, pepper, a mixed spice blend with turmeric ginger and Curry, mild salsa.

(the curry blend is something I came across a couple months ago, I have not seen it since. I use it because of he color and flavor that it gives you can use plain curry. If you don’t like curry you can of course use any other spice blends that you like.)

In a pan I warmed up the froze veggies with a 1/4 cup of water. I left the veggies cooking for about 3- 5 minutes covered. I then added  the chick peas, spice blend, salt and pepper and let them all cook together for another 5  minutes covered.

Towards the end I added the quinoa, since it was from the day before and already cooked It just needed t warm up. I cooked everything together uncovered for about 3-5 minutes.

I then spread some re-fried beans from a can on the tortilla and warmed them up in  the microwave for about 30 seconds. I then added some mild salsa and wrapped up the burrito. I like my burrito a little crispy so I warmed it up in the pan with some live oil until golden brown on each side.
